Old Elk Rum Cask Finish Straight Rye Whiskey begins with Old Elk Straight Rye, made from a mash of 95% rye and 5% malted barley and aged for a minimum of five years. The whiskey then spends two to five months in 53-gallon American oak barrels that previously held Barbados rum for 14 years. Bottled at 50.5% ABV / 101 proof in a 750 mL format, it pairs a high-rye base with a clearly defined secondary maturation in seasoned rum casks.
Old Elk describes the finished whiskey as balancing richness with complexity. The aroma opens with allspice, bringing a direct, warm spice note to the profile. Its palate is presented as bold and complex, while the closing flavors move toward tobacco and overripe pineapple. That sequence gives the finish a contrast between earthy tobacco and concentrated tropical fruit. The producer’s notes remain concise, but they trace a distinct sensory arc from aromatic spice through a fuller central flavor profile to the whiskey’s fruit-and-tobacco close.
