Montelobos Mezcal Ensamble Joven 750ml

Montelobos Mezcal Ensamble Joven 750ml is a 100% agave mezcal artesanal produced at Palenque del Tentzo in San Nicolás Huajuapan, Puebla. The expression combines Papalote (Agave cupreata), Espadín (Agave angustifolia), and Tobalá (Agave potatorum). The agaves are cooked in a conical underground brick pit oven fueled with encino and tepeguaje wood, then milled with a mechanical shredder.

Wild fermentation takes place in open pine vats without added yeast or nutrients before copper-still distillation over direct firewood. Montelobos describes aromas of cooked agave, smoke, and citrus, followed by capers, nutmeg, and pink pepper on the palate. Bottled at 45.3% ABV, or 90.6 proof, the mezcal brings smoke and fruit together with body and acidity.
