Mizu Sakura Cask Shochu

Native yamazakura, or wild mountain cherry, casks give Mizu Sakura Cask Shochu its distinctive barrel-finished character. Handcrafted in the traditional way, it is single-distilled from locally farmed Saga barley and black koji rice, then finished for at least nine months in medium-char casks made by Ariake Sangyo.

Pale gold and fragrant, it opens with spring blossoms, vanilla, banana, rain and fresh-sawn lumber. A velvety palate brings baked cherry, burnt sugar and a touch of smoke, with gingersnap lingering on the finish. The result pairs a focused grain foundation with the unusual aromatic lift of sakura wood.
