Erstwhile Tobalá (2021 Ancestral Limited Edition) 375 mL

Juan Abel Quiroz Agustín’s 2021 Ancestral Tobalá marks his first release in international markets. Just 200 liters were made in Santa María Sola, Oaxaca, using natural fermentation in a Sabino vessel before distillation in Filipino-style clay-pot stills.

Erstwhile describes the release with rich caramel, mole, and tropical-fruit notes; the producer also characterizes Tobalá by its sweet, mellow, floral character and round mouthfeel. Those details give this small-batch mezcal a distinctive sense of place and method without losing its inviting profile. Presented in a 375 mL bottle at 44% ABV (88 proof).
