Catedral De Mi Padre Tobalá Mezcal Artesanal 750 ml

Wild Tobalá agave takes six to twelve years to mature before Maestro Celestino Serenas transforms it into this Oaxaca mezcal. He roasts the agave in an earth oven fired with pine, mango wood, and volcanic rock, then mills it by limestone tahona and ferments it in open pine vats with natural spring mountain water.

The result is dense and layered rather than overtly smoky, opening with roasted nuts and burnt toffee before easing into a caramel finish. Its rustic production and distinctive Tobalá character give every pour real depth. Catedral De Mi Padre Tobalá Mezcal Artesanal is bottled at 46% ABV (92 proof) in a 750 ml format.
